Condensed Milk Flan. In a medium saucepan over medium-low heat, melt sugar until liquefied and golden in color. Add the condensed milk, milk, eggs and vanilla extract to a large blender jar. Blend for a few minutes until smooth.
Pour mixture into prepared pie pan.
Flan is one of my favorite desserts but I didn't enjoy this version as much as another recipe I've tried from this site.
It didn't set up as I'd hoped and I really prefer the kind made with condensed milk.

Glad I gave it a shot. It also makes for a denser, creamier flan — which is exactly how most Cubans like it. Some recipes call for sweetened condensed milk while others use cream or whole milk. A flan made with sweetened condensed milk will be slightly denser than one made with milk or cream.
Condensed Milk Flan instructions
- In a large bowl, add the condensed milk and 4 eggs. Beat with an electrical whisk for 2 minutes.
- Use the can to measure the milk, and add to the mixture, along with the lemon peel. Using a wooden spoon stir gently until its all mixed together..
- In a deep metal tin, do as you would normally when you grease a pan with the caramel. Add 1-2 tablespoons extra of caramel to the bottom of the tin..
- Pour the mixture into the tin..
- Place tin in a large saucepan then add enough water to reach half way up the tin. Cover with a lid that lets the vapor out..
- Boil for around 20/25 minutes. Carefully add boiling water to the pan when needed. Do not go above half way up the tin. Also keep checking that its done it may take less time or slightly longer. For me it depends on which saucepan or tin I'm using..
- Remove tin from the saucepan. Let it cool completely before trying to remove it from the tin..
- Once it's completely cooled, carefully transfer to a plate. I find it easier to place a plate on top of the tin and turn it quickly. It should easily come free, if not tap the bottom of the tin until it comes free..
- Refrigerate until needed..
Likewise, flan made with milk rather than cream will be slightly lighter than a cream-based custard. Add the sweetened condensed milk, evaporated milk, whole milk, vanilla, Bourbon, and salt and whisk until incorporated. Strain mixture through a fine-mesh strainer into a larger bowl. The strainer will catch little bits of egg that you don't want in your flan. Using a larger pan that the pie plate will fit in, fill half way with the boiling water, place in oven, and then place pie plate in the middle of the large pan.
