Ingredients of Super Easy Carnitas

  1. Prepare 1 lb of beef roast or pork roast.
  2. You need 3 clove of garlic, crushed.
  3. You need 1 of onion, chopped.
  4. You need 1 large of carrot, peeled and chopped.
  5. You need 2 large of tomatos, seeded.
  6. You need 2 of chopped peppers, jalepeno serrano.. your choice.
  7. It's 3 tbsp of chili powder.
  8. It's 3 tsp of salt.
  9. It's 1 tbsp of cumin.
  10. You need 1 1/2 tsp of dried oregano.
  11. You need 1 1/2 tsp of coarse ground pepper.
  12. You need 1 of beef stock.

  1. add all ingredients to a large stock pot, use enough stock to cover the meat.
  2. bring to boil, then simmer 2 hours until beef falls apart.
  3. remove the beef and shred with a fork.
  4. drizzle shredded beef with stock juices until desired moistness achieved, salt and pepper to taste.
  5. * remaining stock juices can be frozen for future use as soup base.
