- First dry roast all the seeds and separate dry roast spices too.take out separately in different bowls.
- Grate finely raw mango and make small pieces of jaggery..
- Remember I prefer jaggery so for one mango chutney 3 to 4 small pieces of jaggery crushed needed..
- Make oil hot in same pan and put roasted seeds and spices together.again cook for 2 minutes.
- Now add grated mango and jaggery powder or sugar and cook at low flame.keep mixing well until jaggery start melting.
- Just keep cooking to dry the whole water come from mango and jaggery or sugar.now add kalonji and vinegar.
