A muslim dish which has some resemblance to the North African couscous.
It is prepared with white or off white coloured wheat,but the regular wheat can also be use.
A dish that originated from arabic cuisine 'Harees', made on occasions as a starter in the northern part of kerala.
You can have Harees/Alsa/Alisa using 10 ingredients and 8 steps. Here is how you achieve it.
Ingredients of Harees/Alsa/Alisa
- Prepare 2 cups of wheat (branless).
- It's 400 gms of Chicken.
- Prepare 1 of onion (chopped).
- It's 4nos. of clove.
- Prepare to taste of Salt.
- You need as required of water.
- It's 2 cups of coconut milk.
- Prepare 1 tbsp of ghee.
- It's 2 tbsps of onion finely chopped.
- You need to serve of sugar.

Harees/Alsa/Alisa step by step
- Wash and soak the wheat in water for 2 hours. For faster cooking, soaking overnight is recommended..
- Drain the wheat and transfer to pressure cooker. Add the chicken, chopped onion, cloves and salt. Pour enough water and cook till one whistle blows..
- Then cook on low flame for about 45 mins to 1 hour..
- Meanwhile, heat ghee in a pan and fry the finely chopped onions until golden brown..
- After an hour, when pressure is down, open the cooker and pour coconut milk and mix well to achieve desired consistency..
- Remove from flame when it starts boiling..
- Transfer to a bowl. Pour ghee and garnish with the fried onions. Serve along with a bowl of sugar..
- You can use any kind of meat - chicken, beef or mutton.
It is served during marriage ceremony and special occasions, as a starter. Aleesa or Harees is a one pot wheat porridge made with chicken/ lamb and few spices.
