Minestrone. In a stockpot, saute the onions, celery and parsley in oil until tender. Stir in the broth, tomatoes, tomato sauce, cabbage, carrots, basil, salt and pepper. I created this soup after becoming tired of the excess salt and lack of veggies in canned minestrone.

  10. Prepare 1 pinch of Fresh oregano.
  11. It's 2-3 of Fresh basil leaves.

  13. It's 15 g of Macaroni pasta.
  14. It's 1 tsp of Salt & white pepper powder.
  15. You need 5 ml of Olive oil, for garnish.
  16. It's 5 g of Parmesan cheese, for garnish.

Minestrone step by step

  1. Heat refined oil in a saucepan..
  2. Add leeks, carrots, zucchinni, French beans & celery (do not add cabbage now)..
  3. Cover the pan, reduce the heat to low, cook for 15 minutes, shaking the pan occasionally..
  4. Add the stock, tomato concasse & oregano..
  5. Cover again & simmer for 20 minutes more.
  6. Add the baked beans, macaroni pasta, cabbage pieces & fresh basil leaves; cook for 10 minutes more..
  7. Season with salt, pepper..
  8. While serving, garnish with grated parmesan cheese & olive oil on top..
